Quest Nutella Creme Brûlée



ONLY 4 INGREDIENTS! 
I made these the other day and they turned out so well! 

2 avocados
3/4 cups clean homemade nutella (recipe on blog)
4 teaspoon maple syrup
1 Quest bar @questnutrition
almond milk (optional, but recommended)

Blend avocado, nutella and maple syrup (and almond milk) together and pour into ramekins. Heat the quest bar in microwave for 15 seconds and flatten as much as possible. Place on top of avocado and nutella mixture. To make the hard crust like creme brûlée, broil it until quest bar becomes golden brown. Place in the refrigerator until it becomes chilled. Enjoy!

Sea To Sky 2015 International Championships

Last weekend, SFU took home first place in the level 6 collegiate division at Sea to Sky 2015. It was a two-day competition at the Vancouver Convention Centre. On day one, SFU's Red Team set the bar high with a nearly flawless routine and wowed the audience with their pyramids and baskets. Check out our performance on YouTube:

SFU Fashion Week 2015

Last night at SFU Fashion Week 2015. I met the gorgeous Zara from her clothing line Isaah. I loved all her dresses! I will link her blog and website soon. More pictures are on their way!

I am so excited to announce that I have been selected to be a NIKE Campus Brand Ambassador for Simon Fraser University.

On June 12-14, the annual Nike Women's Race will be celebrating women in sports with an exciting weekend of training, a premium expotique, and sportswear programming leading up to the 15k marathon on June 14th. The event is held on Toronto Island and Harbourfront Centre.

Cheer Competition Feb 28 - Mardi Parti


This is a really late post, I know, but the video for my first cheer competition is live on YouTube! This is Simon Fraser University's Red Team (the competitive team) competing at the 2015 Mardi Parti which was held at the Richmond Olympic Oval.

Some of our team members were completely new to cheerleading just 6 months ago! It's amazing how they learned these level 6 stunts so quickly! Our team went through so many changes with our team members and our counts, so although we did not compete as well as we know we could, we were all really proud to show our friends and family what we've been working towards. We came third place for the level 6 division, while UBC came second, and Absolute Cheer took home first place. It was a really exciting experience, and hopefully I will get to compete again at the 2015 Sea to Sky competition!

Celery Risotto and Coconut Protein Prawns - Quest Nutrition

Here's the Recipe that we made on valentine's day! We made coconut protein prawns served on top of celery and cheese risotto. If you haven't seen the video yet, check out my YouTube channel



Risotto
Ingredients:

  • Cheese Risotto package 
  • 2 celery sticks
Directions:
  • Use 1/4 cup of water less than what the label says to cook the risotto so that it will be easier to mold
  • Mince celery sticks and add to risotto for the last 2 minutes of cooking
  • Press risotto into a small cylinder-shaped tea cup. Make sure to pack it in tight so it will hold its shape. But don't pack it so tight that you can't get it out. You may have to shake it a bit to get the risotto to come out. Place on plate.


Prawn recipe adapted from Quest Nutrition

Prawn Marinade:
  • 1 pound prawns, cleaned
  • 1 cup coconut-almond milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
Breading:
  • 1 bag Quest Sea Salt protein chips
  • 1/3 cup shredded coconut
Powder Blend
  • 1/3 cup vanilla protein powder
  • 3/4 teaspoon cajun seasoning
Egg Wash
  • 2 large eggs
for cooking: coconut oil or any type of oil is needed 

Directions:
  1. Wash prawns and place in bag with shrimp marinade. Place in refrigerator for 1 hour (I put mine in for 30 minutes)
  2. Place the breading, powder blend and egg wash into three separate bowls. Take individual prawns and place in each bowl in the order listed above. 
  3. Place coconut oil in a frying pan over medium heat. When the pan is warm, place prawns into pan. Cook each side for 2-3 minutes. Fry until golden brown or until prawns are fully cooked
  4. Place prawns onto risotto and top with garnish

I feel as if Valentine's Day isn't one of those celebrations to go all out on for gifts. I prefer the idea of baking something rather than buying something because everyone loves food, and there are endless ways to create the perfect Valentine's food gift. I made a compilation of some ideas of my own, as well as pictures I found from interest

Blanket scarves - YouTube!

I've been meaning to make a video for blanket scarves for awhile now but I've been super busy with school, cheer and work. This is not my best work, and it's not exactly how I wanted it to turn out but it's been longgg overdue and I just wanted to upload something already! I recorded several outfits and different ways to wear the blanket scarf including: poncho style, shawl, traditional, and draped. I wore it with jeans, a dress and leggings. Here are some photos:

21st Birthday



It was my 21st birthday a few days ago and I spent it mostly eating and going to the gym. We tried to go to one of my favourite sandwich places, Meat and Bread, but the gas town location was closed for renovation. Then we went to lift weights at the Steve Nash gym at coal harbour. It has a really nice view and the equipment was nice, but unfortunately I felt too sick to get a good workout in. Lastly, we went to eat a the Dark Table, which is the place I've been wanting to go to for a really long time now. I was not let down, and the experience was amazing. For those of you who do not know what Dark Table is, it is a restaurant that is served in complete darkness, with visually impaired servers. As I walked into the restaurant, I was instantly surrounded by noise. We got to our table and felt a napkin, side plate, and cutlery in front of us. We had to sit across from each other because if you want to sit together, you'd have to request it beforehand. Our waiter then brought us complementary bread, and I must say, putting on the butter was the hardest part of the whole dining experience. I ended up using my hands to eat the rest of the dishes. We ordered the prawn risotto and a surprise dish, both of which were delicious. The surprise dishes were: kale salad to start off with, curry fish with rice for the main entree, and pumpkin pie for dessert. Overall, we both enjoyed this experience and we are definitely going back, but we will request to sit beside each other for next time!

High Tea and Festival of Lights



It was my first time trying High Tea at the Fairmont Pacific Rim in Vancouver yesterday. The environment was nice and peaceful, and we were able to grab the comfiest chairs in the place. I made a reservation and we were able to choose whichever seats we wanted.  The food and tea was Asian inspired, so it was different than the usual Afternoon Tea. We tried the Jasmine pearl tea and the Oolong tea. Both tasted good, but after a water refill, the Jasmine Pearl tea became extremely strong for some reason.

I liked the uniqueness of the food, and it was really tasty, but if you're looking for the actual High Tea experience, this is not the place to go. There was also a lot less food than other High Tea places, but I wasn't complaining because my small stomach was satisfied.

Then, we went to the VanDusen Festival of Lights. It was the perfect weather to go because it was not too cold and it was not raining! This place is always beautiful, in the summer or winter.
